Pancakes are something that everyone loves! Although a lot of people stay away from them, because most are highly processed, so high in sugar and dairy, but NOT these! This vegan banana pancake recipe is obviously vegan, with moderate carbs (only from bananas), and just purely YUMMY. 

Pancakes are also a huge thing in the fitness industry, so these vegan banana pancakes will also be high protein!

If you don’t find it necessary to have your pancakes high in protein then you can remove the protein powder!

These vegan banana pancakes are light and fluffy with loads of banana flavor and served with plenty of sliced banana and syrup they make a perfect breakfast treat.

They’re also super easy to make, so they’re just perfect for a lazy Sunday morning.

How To Make Vegan Banana Pancakes

This is as mentioned a quick and easy recipe for vegan banana pancakes, so no fuss just amazing fluffy pancakes.

You obviously want them to turn out perfect so I will mention some things you can run into whilst baking them.

The first thing I noticed was that I could taste the protein powder, It wasn’t the taste of the protein powder, but it was the powder itself.

Therefore I decided to add some more soy milk, but no too much because we want a thick consistency!

The protein powder is optional. They work perfectly fine without them!

My second tip is to be careful with how much banana you put into your batter. Adding too much banana in the batter can lead to your pancakes being brown on the outside, but the inside can be undercooked!

Cooking these pancakes on a gas stove, they would have been burned on the outside before I got to the right texture on the inside. The flavor was great! But it was too wet inside.

So I had to reduce the amount of banana until I used just one large banana in the batter. This was just enough to reach great taste and excellent texture batter!

Some people will never give baking a try because they think it’s a bit too difficult. But making the batter for this recipe, or any other recipe is actually super easy.

Making the batter for these vegan banana pancakes is as simple as mashing 1 banana, then simply add some flour into the mixing bowl and adding a little sugar, baking powder, salt, scoop of protein powder, and cinnamon and mix it together.

How convenient is it that my favorite protein powder is the pancake batter flavor 🙂

Then mash up some banana in a bowl with some coconut oil and add to the mixing bowl with some soy milk and vanilla extract and mix into a thick batter

Heat up a large griddle or pan with some coconut oil until hot and then add in around 1/4 cup of batter for your first pancake. 

When it starts looking a little dry along the edges with little bubbles on top then it’s time to flip it and cook it on the other side until nicely browned. 

Can you freeze them?

Yes, these vegan banana pancakes freeze without a problem. In fact, I usually make a ton in one go just so I can freeze them and have them ready whenever I feel like it!
To freeze, simply stack them and put them in a ziplock bag or a freezer-safe container. They can get a little stuck to each other ones frozen, so a tip is to add a piece of partment paper between pieces.

Top Tip: Cook The Pancakes Long Enough

As I mentioned earlier, I struggled with getting the right texture on the inside of the pancake. Even with the right amount of banana in the batter, it’s important to cook them long enough, flip them often for the nice golden brown color on both sides, and press down on the pancake with your spatula so that they get cooked nicely on the inside.

Add More Fruits

I can go on and on about why I add fruits to my pancakes and other meals. Not only do I add them for taste, but also for their benefits. For example, I usually add blueberries to my vegan banana pancakes, because they’re rich in antioxidants.

This vegan banana pancake recipe is perfect for a quick and easy vegan sunday breakfast. They are fluffy, light, and delicious.

Ingredients
  

  • 156 grams flower
  • 1/2 cup banana 1 whole banana
  • 1 cup Soy milk
  • 1 tbsp coconut oil
  • 2 tbsp sugar
  • 1 tbsp Baking Powder
  • 1 tsp Salt
  • 1 scoop Protein Powder optional
  • 1/2 tbsp Cinnamom
  • 1 Tbsp Vanilla Extract

Instructions
 

  • Sift the flour into a mixing bowl and add the sugar, protein powder, baking powder, salt and cinnamon, then mix together.
  • Mash the banana in a bowl and add the coconut oil and mash together. Add to the mixing bowl with the soy milk and vanilla and mix in. Your batter will be fairly thick.
  • Heat up a pan with a little coconut oil until hot and then add in some batter for your first pancake, around 1/4 cup of batter at a time. When the pancake starts looking dry along the sides with little bubbles on top, then flip it over until browned on the other side. Keep flipping and pushing down with your spatula until the pancakes are very nicely browned and the inside has had a chance to cook through.
  • Serve pancakes with some sliced bananas, other fresh fruits as you like and syrup for drizzling.
